Basically I'm looking into getting an android phone and installing a different open-source OS on it, I know Tails doesn't work on phone hardware, so I was wondering if anyone knows what good OS options are, what software could be most useful, and if it's possible to completely tor-ify a phone.

sorry I can't answer your question.
But I'm really interested. Why do you need it?

I'm just getting really interested in security and self-hosting stuff, and getting a phone like this set up would be really useful for messing around with and testing stuff.

here's what you need to do: ditch the phone (you're not gonna be able to do it on an iphone, android is an exception), get a laptop, I recommend a basic dell computer with windows 11 on it (you can use a macbook but you're gonna be looking for a lot of programs that run off of arm64 and that's a major hassle), create vm (virtual machine), I recommend running kali linux as your os because it has a lot of pen tools (some however are outdated), and run with that.
